Она служит прежде всего источником полноценного питания в связи с высоким содержанием углеводов в клубнях и является сырьем для получения спирта, крахмала, белка и другой продукции, используемой в различных областях народного хозяйства. В настоящее время ученых привлекает картофель с цветной окраской клубней, так как в них содержится большое количество антиоксидантов. Эти вторичные метаболиты помогают человеку справиться с сердечно-сосудистыми заболеваниями, сахарным диабетом, избыточным весом, онкологическими заболеваниями, гипертонией и другими болезнями. Поэтому создание новых форм картофеля с цветными клубнями является одной из главных задач картофелеводства. Изучено 16 образцов картофеля с высоким содержанием антоцианов и каротиноидов. Исследования проводились на кафедре биотехнологии Российского государственного аграрного университета - Московской сельскохозяйственной академии имени К.А. Тимирязева, а также в условиях полевого опыта Всероссийского научно-исследовательского института фитопатологии (р.п. Большие Вяземы, Одинцовский район, Московская область, Россия). В работе использовались биотехнологические методы введения в культуру in vitro, размножение и химиотерапия. В результате проведенной работы среди изучаемых выделены образцы № 3 и № 5 с повышенным содержанием крахмала: 18.53% и 19.08% соответственно. В культуре in vitro показано, что образцы с красной мякотью обладали более высокой скоростью роста и развития, в то время как образцы с синей мякотью значительно отставали по данным показателям.</p></abstract><trans-abstract xml:lang="en"><p>In the modern world, potatoes remain a consistently valuable culture for humans. It primarily serves as a component of good nutrition due to the high content of carbohydrates in tubers. It is a raw material for producing alcohol, starch, protein, and other products used in various areas of the national economy. Scientists currently pay attention to potatoes with colored tubers, as they contain many antioxidants. These secondary metabolites help people cope with cardiovascular diseases, diabetes, overweight, cancer, hypertension, and other diseases. Therefore, creating new forms of potatoes with colored tubers is one of the primary tasks of potato farming. The article studied 16 potato samples with a high content of anthocyanins and carotenoids. We conducted the studies at the Department of Biotechnology of Russian State Agrarian University - Moscow Timiryazev Agricultural Academy and in the field trial of the All-Russian Research Institute of Phytopathology (Bolshie Vyazemy, Odintsovo district, Moscow region, Russia). We used biotechnological introduction methods into in vitro cultivar, reproduction, and chemical treatment during the study. As a result of this work, among the studied samples, we identified No. 3 and No. 5 with an increased starch content of 18.53% and 19.08%, respectively.
